These little bites are the perfect snack when you're on the go. I often use them as an alternative to store bought granola bars (which often contain a lot of added sugar) and store them in the refrigerator. And, since you don't have to bake them, they're quick to prepare too!
Peanut Butter Chocolate PoleBody Bites
3/4 cup natural peanut butter
1 cup rolled oats
1/4 cup ground flaxseed
2 Tbs. honey
1/4 cup chocolate chips
Optional: 1/4 cup shredded coconut or cocoa powder, for rolling
- Combine nut butter and oats in a bowl, stirring thoroughly until combined.
- Stir in flax, honey, and finally, chocolate chips. (If mixture is too dry, add additional nut butter).
- Chill in refrigerator for 15 minutes.
- Once cool, form 1” balls, then roll in coconut flakes or unsweetened cocoa powder (if desired). Store in the refrigerator.
